Coconut Pecan Cookies

While I'm not really a fan of nuts in cookies, pecans work perfectly in these alongside the refreshing taste of coconut. Dust these in sugar before you bake them if you really want them extra sweet.

Ingredients

  • 2 sticks unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar - packed
  • 2 eggs
  • 1 teaspoon vanilla
  • 2-1/2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Process

  • Cream the butter and both sugars
  • Add the eggs and vanilla and mix well
  • Mix in the flour and cinnamon, but not completely. Then add the coconut and pecans and finish mixing, forming a dough.
  • Roll into 1" balls and place on parchment paper. Give them room to spread.
  • Bake at 350 degrees for 10-12 minutes, just until they start to brown on the edges. Should yield around 5 dozen cookies.
