Lemon Blueberry Loaf

Bake this as a breakfast bread - it's dense enough for the toaster - or serve it as a dessert. Make sure your blueberries are frozen solid otherwise they will fall apart and make mush in the blender.

Ingredients

  • 1/3 cup unsalted butter
  • 1 cup sugar
  • all of the zest of 2 lemons
  • all of the juice from the 2 lemons
  • 2 eggs
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1 cup frozen blueberries

Process

  • Cream the butter, lemon zest, and sugar and then add the eggs and lemon juice.
  • Combine flour and baking powder then stir into egg mixture.
  • Add milk.
  • Fold in the blueberries
  • Pour batter into greased meatloaf pan and bake at 350 degrees for 60 minutes.
