Lemon White Raisin Cookies

The original question was, "White raisins and what?" How about lemon and vanilla? The off-white color is from cannabutter, but these can be made for all ages with just regular unsalted butter.

Ingredients:

  • 3 sticks unsalted butter
  • 1-1/2 cups granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • all of the zest and juice from 2 large lemons
  • 4 cups all-purpose flour
  • 1-1/2 teaspoons baking soda
  • 1 cup White raisins

Process:

Cream the butter and sugar together with the lemon zest and lemon juice. Add eggs and vanilla and mix well. Sift flour and baking soda then mix in the raisins and add one cup at a time to the mixer until well-combined. Roll into balls 1" in diameter and flatten as you place them on parchment covered baking sheets. Bake at 350 for 10 minutes. Yields 4 dozen cookies.
